The inspiration for this breakfast came from an episode of Man Vs. Food we watched last night. He was eating at The Buff Restaurant in Colorado and we all drooled and sighed over their signature breakfast. Since we couldn’t go to Co. this morning, I tried to come up with my own version.
What we have here is:
Pancakes made with whole wheat flour freshly made in my Blend Tec. (best kitchen purchase ever).
Pieces of crispy cooked bacon placed on top of the pancake batter while it cooked. (this is key… and it tastes sooooo good.)
A runny fried egg on top of the stack.
Cut into pie wedges and let the egg and syrup get all over each piece.
Again, this is a Sunday only breakfast. Lo-cal it is NOT, but we can get away with one day of decadent food. We all split this stack, so it was smallish but super satisfying.
